Maple Tapping on the Farm Late winter on the farm is a time of planning and preparation. It’s also maple-sugaring time! From late February to early March, Farmer Craig Haney is tapping sugar maple trees around the farm to collect their sap - the sweet stuff maple syrup is made from. What makes this time of year the right time for maple sugaring? Farmer Craig explains during this transition from winter to spring, the temperature goes through great changes in short periods of time. The best conditions for good sap runs are when the temperatures drop below freezing at night and rise to the 40’s and 50’s during the day. This change in temperature causes pressure inside the tree that helps the sap flow more easily. Late winter on the farm is a time of planning and preparation. It’s also maple-sugaring time!
